Any REAL suggestions on what I should use for a Dedicated server? there's so much out now these days for Quake its real hard to keep up!

Or do you mean a total complete standalone dedicated server? I don't think ProQuake has one, but at the same time it is the gold standard for Quake servers, is more or less universally used, and has been given a lot of work to ensure that it's the best.
